
Mª Jesús Rodrigo, researcher at the Institute of Agrochemistry and Food Technology (IATA-CSIC), Gema Ancillo, coordinator of the Citrus Germplasm Bank of the Valencian Institute of Agricultural Research (IVIA, Generalitat Valenciana) and Alejandro Medina, technician at the Germplasm Bank, organised a scientific workshop on 19 November: "La ciencia del color, sabor y olor de los cítricos" (The science of the colour, flavour and smell of citrus fruits), as part of the scientific dissemination activities organised by the 'Quart es Ciencia' association as part of the 8th Science Week.
In the workshop, the participating public was able to experience with their own senses the wide diversity in colour, aroma and flavour that exists among citrus fruits. To conclude, the participants carried out a small experiment with orange juices with different colours in which the `ocult' pigments they contain were discovered and the benefits they explain can be provided by our diet.
