Very positive balance of the Cavawinner project that seeks to improve and position Spanish cava against other sparkling wines

With the aim of improving and positioning Spanish cava in relation to other international sparkling wines, the Cavawinner R+D project takes stock of what was started two years ago by a consortium of companies and research bodies. The first results are positive and allow the generation of new knowledge about cava. This project is also working to optimise production costs and focus on international consumer tastes.

Eight business partners (Caves Vilarnau - leader of the project -, Bodegas Bilbaínas - VIÑA POMAL, Juvé & Camps, GRAMONA, Dominio de la Vega, Bodega San Valero, Mecanizaciones Alavesas and #Trefinos) and five national reference research bodies (ainia technology centre, IATA CSIC - Institute of Agrochemistry and Food Technology, Universitat Rovira i Virgili - URV, Universitat de València - UV and Centro Tecnológico del Vino - VITEC) are developing this project with the financial support of the CIEN program of the CDTI Centro para el Desarrollo Tecnológico Industrial.

The IATA research group on systems biology in yeasts of biotechnological interest is part of the project, with the leadership of Dr. José Manuel Guillamón and Dr. Amparo Querol.
