Dr. Fidel Toldrá participated in the 1st Asia-Pacific Congress on Meat Science and Technology in Nanjing, China

Dr. Fidel Toldrá, Research Professor of the Meat and Meat Products Biochemistry, Technology and Innovation group at the Institute of Agrochemistry and Food Technology (IATA) gave the inaugural lecture entitled "Processing of dry-cured ham and generation of bioactive peptides" at the 1st Asia-Pacific Congress on Meat Science and Technology held in Nanjing, China, from 11 to 13 October last.
