
Recently the digital supplement of La Buena Vida of the newspaper El País has compiled some recommendations from experts for Christmas about when it is more advisable to buy some products and how to keep them until the days of large family meals.
It has been proven that on the eve of the Christmas celebrations some products increase their prices considerably and therefore, food experts have indicated which is worth buying before and freeze them following certain guidelines.
Among others experts, our colleague, Dr. María Dolores Rodrigo, technical vice director and researcher of the Department of Food Conservation and Safety Technology of IATA, explained from the point of view of food safety that, although some foods can be freezing, like pineapple, it is preferable not to do so, given that in this process the texture is affected and the price does not make an important difference and in some cases it tends to go down, so it is preferable to buy it between December 12th and 22nd and keep it in a cool place away from the sun.
The main problem when freezing food is because they contain water and, "when frozen, the water they contain freezes also forming crystals that occupy more volume, which sometimes causes some fiber in meat or fish to break. we thawed, that water that was occluded can go outside, leaving the food drier. "
He also added that, doing it at the right temperature, (-18ºC, -20 º C) there should be no problem and María Dolores recommends that to thaw them it is preferable to do it the day before in the fridge.
