
The 26th of October 2017, took place the third meeting of the Operative Group on "Beef quality markers and identification of preparations".
In this Group, led by ANICE, in which five research centers participate: VISAVET, ASINCAR, UPM (Polytechnic University of Madrid), AINIA Technological Center and IATA-CSIC (Institute of Agrochemistry and Food Technology) with the representation of Fidel Toldrá, and the associated companies: Embutidos Bernal, FACCSA-Prolongo, EMCESA, INCARLOPSA and Elaborados Cárnicos MEDINA, counted on the Ayming Innovation Agent for the coordination of the group.
The main goal of this operative group is to provide the meat sector with innovative solutions through the implementation of an analytical methodology that allows the differentiation between products and meat preparations and the identification of markers that allow to assess the quality of the meat in terms of meat exudation.
Among the topics to be discussed at the meeting was the budget for the project, which will be presented in the next phase. Initially there was talk of a figure of approximately one million euros, but until the bases for the next one are applied, probably in 2018, it will not be possible to know in detail the final amount destined to the project.
It was also agreed that the definitive name of the project will be: "Application of Advanced Analytical Methodologies in the Identification of Biomarkers of Meat Derivatives and Meat Exudation", with the corresponding acronym "CARBIOMEX".
