Cristina Molina gave a conference on gluten for the Celiac and Gluten Sensitive Association

Within the cycle "We talk to experts. Today we talk about ...", organized by the Association of Celiacs and Gluten Sensitive of the Community of Madrid, on May 26 our colleague Cristina Molina Rosell, from the group of Cereals and Cereal Based Products, gave an online conference with the title "Gluten: fact or fiction".

The objective of this conference was to provide the necessary information to know the role of gluten in the development of various foods and their properties, as well as the characteristics of gluten-free foods, with special emphasis on the nutritional aspects of these foods. Dr. Molina's research has focused on the design, development and biochemical, technological and nutritional evaluation of improved cereal products.
